Grilled Lamb Chops with Mint Sauce

(serves four)

  • [8] 1” thick, rib or loin chops, trimmed of fat
  • salt
  • pepper

MINT SAUCE:

  • 1/2 cup cider vinegar
  • 1/4 cup sugar
  • 2 tbsp oil
  • 1/2 cup chopped mint leaves

(part of mixture to be used in grilling, the rest to be served with chops at table)

To make mint sauce boil vinegar and sugar together, remove from heat, add the mint, let stand for 30 minutes. Remove 3 tbsp of the mixture and combine it with the oil and brush on the chops as they cook. Salt and pepper the chops, grill over fire for 8 minutes, turning three or four times and brushing occasionally with mixture.
