Garlic Bread

  • 1/2 cup plus 2 tbsp oil (olive is best)
  • 1 cup water
  • 1 cup matzo meal
  • 1 tsp. salt
  • 1 tsp. chopped fresh basil
  • 4 large eggs
  • 2 cloves garlic

Combine 1/2 cup oil and 1 cup water in a saucepan, bring to a boil. Remove from heat and add matzo meal, salt and basil all at once. Stir well with wooden spoon. Chop 1 clove of garlic fine. Mix eggs and half of garlic into matzo meal mixture. Mix and form a ball. Shape into an oval loaf. Place on ungreased cookie sheet and bake 40 to 50 minutes until top is golden brown. Remove from cookie sheet and let cool 10 minutes on rack. split in half lengthwise. Mince remaining garlic and mix with 2 tbsp oil, spread mixture over each half. Toast under broiler. Cut into 12 slices and serve immediately.
