Easy Coconut Custard Pie
(variation on a recipe from Grace Bowden)
(forms its own crust while baking)
1 cup coconut
1/2 cup sugar
1/4 cup confectioner’s (powdered) sugar
1 tbsp vanilla
2 cups milk
1/2 cup margarine
1/2 cup sifted plain flour
4 eggs
Combine all ingredients in blender or food processor for a 30 to 45 seconds until well mixed. Pour into 10” pie plate. Bake in 350 degree oven for 1 hour or until center is firm.
